The nutritional information given after each menu is approximate and is based on one serving of each of the menu items listed (excluding any suggested wine). Our goal is to develop menus and recipes that meet the National Cholesterol Education Program Adult Treatment Panel III and American Heart Association guidelines. Chicken with Goat Cheese- Serves 4
4 Chicken Breast Fillets (1 lb. Meijer Family Pack Split Chicken Breasts)- $1.25
1 tbsp. Meijer butter, melted- $0.08
2 tbsp. Meijer Extra Virgin Olive Oil, divided (on hand)
1 cup T. Marzetti Fat-Free Garlic & Onion Croutons- 0.75
1 log of Promise Goat Cheese- $3.49
1/4 cup Meijer Low-Fat Milk- $0.25
2 tbsp. minced chives- $0.25
Pound chicken breasts to even 1/2 inch thickness. Combine butter and 1 tbsp. oil in shallow bowl. Put crushed croutons in pie plate. Dip chicken breasts in butter mixture, then croutons, shaking off excess. Heat remaining 1 tbsp. oil in large skillet over medium-high heat. Add coated chicken. Cook until brown, about 3 minutes per side. Reduce heat to low. Cook 1 to 2 additional minutes per side until chicken is tender and no longer pink. Combine goat cheese, milk, and chives with electric mixer at medium speed. Place each chicken piece on serving plate; top with a dollop of flavored goat cheese.

Asian- Style Stuffed Bell Peppers- Serves 4
4 large red and green bell peppers- $2.00
1 lb. Jennie-O Lean Ground Turkey- $3.43
1/4 cup chopped onion- $0.50
1 can tomato sauce, divided- $0.93
2 tsp. peeled, grated gingerroot- $0.12
1 tbsp. Worcestershire sauce- $0.15
1 tbsp. reduced sodium soy sauce- $0.14
1 cup cooked Meijer Long Grain Brown Rice- $0.47
3 tbsp. chopped fresh parsley- $0.25
Preheat oven to 350 degrees F. Cut stem ends from peppers; remove seeds. Cook covered in boiling water for 1 minute. Drain upside down on paper towels. In skillet with 1 tbsp. Meijer Extra Virgin Olive Oil, cook ground turkey and onion until turkey is browned and no longer pink, about 10 minutes. Drain fat. Combine turkey mixture, 2 tbsp. of tomato sauce, ginger, worcestershire sauce and soy sauce in large bowl. Stir in rice, 1 cup of tomato sauce, parsley and salt and pepper to taste. Stuff peppers; place upright in 2 quart casserole dish sprayed with nonstick cooking spray. Spoon remaining tomato sauce over stuffed peppers. Cover and bake 25- 30 minutes or until heated through.
