NOTE ON PORTION SIZES and NUTRITIONAL CONTENT OF MEALS
The nutritional information given after each menu is approximate and is based on one serving of each of the menu items listed (excluding any suggested wine). Our goal is to develop menus and recipes that meet the National Cholesterol Education Program Adult Treatment Panel III and American Heart Association guidelines. Also our menus provide servings from all of the MyPlate (www.choosemyplate.gov) food groups to assist in providing balanced meals. Each recipe will indicate the number of servings it provides. Other menu items are based on normal portion sizes (i.e.: 1/2 c. vegetable or fruit; 1 piece of fresh fruit; 1 c. salad; 2 T. salad dressing; 1 roll or slice of bread; 1/2 c. rice or potatoes; 1 c. milk or soup; 3-4 oz. meat). You can also refer to the nutritional facts panel on packaged foods which provide the portion size and number of servings per package. Salsa Beef Tacos
Serves 4

1 lb. overwrap ground sirloin beef-$4.19
1 1/2 tsp. McCormick ground cumin-on hand
1 1/2 tsp. McCormick chili powder-on hand
1/2 cup Pace chunky salsa-$.57
8 Meijer soft corn tortillas, warmed according to package directions-$.71

1. In a large nonstick skillet cook ground beef over medium heat 5 to 7 minutes or until browned. Stir in cumin, chili powder and salsa; simmer until heated through.
2. Spoon beef mixture evenly into each tortilla. Top evenly with lettuce and cheese. Serve warm.

Braised Ginger Beef
Serves 4

1 lb. Certified Angus Beef chuck roast, cut into 3/4-inch cubes-$3.49

3 tbsp. La Choy lite soy sauce-$1.05

1. In a large bowl combine beef, onion, soy sauce, hoisin sauce, ginger and garlic. Cover and refrigerate 8 hours.
2. Transfer beef mixture to slow cooker; stir in broth. Cook on low 10 hours or until beef is tender.
3. Increase heat to high. Stir in mushrooms. In a small bowl combine cornstarch with 2 tbsp. water; stir into slow cooker. Cook 15 to 20 minutes or until thickened.
