The nutritional information given after each menu is approximate and is based on one serving of each of the menu items listed (excluding any suggested wine). Our goal is to develop menus and recipes that meet the National Cholesterol Education Program Adult Treatment Panel III and American Heart Association guidelines. Peach Chipotle Chicken Kabobs- Serves 4
1/3 cup Southwestern chipotle marinade- $0.52
3 tbsp. peach preserves- $0.24
12 oz. Meijer Frozen Boneless Skinless Chicken Breasts, thawed and cut into 1 1/2- inch pieces- $1.99
2 small zucchini, sliced into 1/2-inch rounds- $0.80
1 large red bell pepper, cut into 1 1/2- inch pieces- $1.00
2 large California Premium Peaches, sliced into 1/2-inch thick pieces- $1.99
In a small bowl combine marinade and preserves; pout into a large plastic resealable bag. Add chicken; seal bag and turn to coat. Refrigerate at least 8 hours. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300-350 degrees F). Remove chicken from marinade; discard marinade. Thread onto 8 skewers, alternating zucchini, chicken, bell pepper, and peaches. Season with salt and pepper. Grill skewers, covered, 4 to 5 minutes per side or until vegetables are crisp-tender and instant-read thermometer registers 165 degrees F.
* If using wooden skewers, soak at least 30 minutes in water before grilling to prevent burning.

Tilapia Rice Bowl- Serves 5
1 (13.5 oz) can light coconut milk- $2.59
1 cup Meijer Long-Grain Rice- $0.40
3/4 lb. Tilapia Fillets- $3.99
2 tbsp. fresh lime juice- $0.25
1 small carrot, shredded- $0.20
1 large garlic clove, minced- $0.10
1 tsp. grated lime peel
3 tbsp. chopped fresh cilantro- $0.25
In a medium saucepan bring coconut milk just boiling. Stir in rice; cover and simmer 18-20 minutes or until all of the liquid is absorbed and rice is tender. Meanwhile, coat a nonstick skillet with nonstick cooking spray and place over medium heat. Add tilapia, cook 3 minutes per side. Add 1/2 cup water, lime juice, carrot and garlic. Cover and simmer 4 to 6 minutes or until fish flakes easily with a fork. Remove from heat. Break tilapia into large bit-size pieces. Fluff rice with a fork; stir in lime peel and cilantro. Season with salt and pepper to taste. Spoon rice into bowls, spoon tilapia mixture on rice and serve.
