NOTE ON PORTION SIZES and NUTRITIONAL CONTENT OF MEALS
The nutritional information given after each menu is approximate and is based on one serving of each of the menu items listed (excluding any suggested wine). Our goal is to develop menus and recipes that meet the National Cholesterol Education Program Adult Treatment Panel III and American Heart Association guidelines. Also our menus provide servings from all of the My Pyramid (www.mypyramid.gov) food groups to assist in providing balanced meals. Each recipe will indicate the number of servings it provides. Other menu items are based on normal portion sizes (i.e.: 1/2 c. vegetable or fruit; 1 piece of fresh fruit; 1 c. salad; 2 T. salad dressing; 1 roll or slice of bread; 1/2 c. rice or potatoes; 1 c. milk or soup; 3-4 oz. meat). Recipes

Bacon-Stuffed Squash- Serves 4

2 tsp. chopped fresh thyme leaves- $0.33
1/4 cup finely chopped celery- $0.41
1/4 cup finely chopped onion- $0.43
1/4 cup Mejer Shredded Reduced Fat Cheddar Cheese- $0.74
2 large yellow summer squash- $1.00
1/2 cup Meijer Italian Breadcrumbs- $0.24
4 strips Tyson Bacon, chopped- $0.75

Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat. Meanwhile, cut squash lengthwise into halves. With spoon, scoop out pulp, leaving at least 1/2-inch shell; set aside. Coarsely chop pulp. Cook bacon in medium skillet over medium heat until browned. Add onion and celery; cook and stir 2 minutes. Stir in squash pulp; cook and stir 1 minute. Remove from heat; set aside. Stir in breadcrumbs, cheese and thyme. Spoon filling evenly into squash shells, pressing lightly. Place on grill. Grill, covered, 7 to 11 minutes or until squash is tender and filling is hot.
