NOTE ON PORTION SIZES and NUTRITIONAL CONTENT OF MEALS
The nutritional information given after each menu is approximate and is based on one serving of each of the menu items listed (excluding any suggested wine). Our goal is to develop menus and recipes that meet the National Cholesterol Education Program Adult Treatment Panel III and American Heart Association guidelines. Also our menus provide servings from all of the My Pyramid (www.mypyramid.gov) food groups to assist in providing balanced meals. Each recipe will indicate the number of servings it provides. Other menu items are based on normal portion sizes (i.e.: 1/2 c. vegetable or fruit; 1 piece of fresh fruit; 1 c. salad; 2 T. salad dressing; 1 roll or slice of bread; 1/2 c. rice or potatoes; 1 c. milk or soup; 3-4 oz. meat). You can also refer to the nutritional facts panel on packaged foods which provide the portion size and number of servings per package. Portobello Quesadillas- Serves 4

1 tbsp. Meijer Extra Virgin Olive Oil (on hand)
1 small onion, diced- $0.52
2 cloves garlic, chopped finely- $0.10
2 large Portobello Mushroom caps, chopped- $2.50
1 tsp. lime juice- $0.20
1 tsp. cilantro, finely chopped- $0.10
1/8 tsp. salt (on hand)
1/2 tsp. ground black pepper (on hand)
4 Meijer Whole Wheat Flour Tortillas- $0.99
1 1/2 cup of Sargento Shredded Reduced Fat Monterrey Jack or Cheddar Cheese- $1.00

Heat oil in skillet over medium heat. Add onion and garlic; cook for 1 to 2 minutes. Stir in mushrooms; continue to heat for 7 minutes. Stir in lime juice, cilantro, salt, and pepper, remove mushroom mixture from pan. Using same skillet, reduce heat to low; place on tortilla in bottom of pan. Place 1/4 of cheese and 1/4 of mushroom mixture onto half of the tortilla. Fold the other half over; heat for 1 minutes or until cheese is melted. Use same method for remaining 3 tortillas. Cut each tortilla in four pieces and serve.

Festive Shrimp Pasta- Serves 4

1 1/2 cups Meijer Cooked Shrimp- $5.32
1/2 cup Meijer Italian Dressing- $0.32
8 oz. Creamette Angel Hair Pasta- $0.50
2 tbsp. Meijer Extra Virgin Olive Oil (on hand)
3 tbsp. butter (on hand)
6 green onion, thinly sliced- $0.25
8 cloves garlic, minced- $0.40
1/4 cup chopped fresh parsley- $0.25
1 Roma tomato, seeded and chopped- $0.26
1 red bell pepper, seeded and chopped- $0.62
1 tbsp. McCormcick Italian Seasoning- $0.14

Place shrimp in a medium bowl and add vinaigrette. Cover and chill up to 30 minutes. Meanwhile, cook pasta according to package directions; drain and return to pan. In a large skillet heat oil and butter over medium-high heat. Add onions, garlic, and parsley. Cook and stir 2 minutes. Add shrimp and vinaigrette. Cook until shrimp is heated through, stirring occasionally. Stir in tomatoes, Italian seasoning, and salt and pepper to taste. Heat through. Pour shrimp over pasta in pan; toss to coat. Serve warm or chilled.

1/2 cup freshly squeezed lime juice- $0.40
1/4 cup Meijer Extra Virgin Olive Oil (on hand)
2 tbsp. Meijer Honey- $0.42
1/4 tsp. cayenne pepper- $0.12
4 Meijer Family Pack Boneless, Skinless Chicken Breasts- $1.77

1 cup chopped Roma Tomatoes- $1.29
1/2 cup peeled, seeded and chopped cucumber- $0.25
1 ripe avocado, pitted, peeled, and sliced- $1.33

In a small bowl, whisk together lime juice, olive oil, honey, salt to taste and cayenne pepper. Pour half of mixture over chicken in resealable plastic bag, saving remainder for later use. Seal bag with chicken; place in refrigerator for 1 hour. Spray grill rack with nonstick cooking spray. Preheat grill to medium. Remove chicken from resalable bag, discarding marinade and bag. Place chicken pieces on grill, cover with grill lid, and cook 8 to 10 minutes on each side of until tender and no longer pink (165 degrees F). Chop into pieces. Combine chicken pieces, tomatoes, cucumber, avocado, basil in large salad bowl. Toss gently with reserved lime mixture and serve immediately.
