Super Simple Halloween Menu Ideas

 

Halloween parties and trick or treating can be hectic events so here are a few ideas to make your spooky entertaining fast and stress free!  Round out your menu with our carrot fingers and apple dippers in pumpkin dip to add a healthier flare.  Happy Haunting!

Witch’s Brew:
Serves
Ingredients
1 quart lime sherbet, slightly softened
1 container (12 oz) frozen limeade, thawed
1 bottle (1 liter) ginger ale
Gummy worm candies, if desired
Lime slices, if desired
Directions:
In a punch bowl mix sherbet, limeade and gingerale. Garnish with lime slices and gummy worms.

Gory White Bean Chicken Chili
Makes 6-8 servings
Ingredients:
1 1/2 to 2 Cups cooked chicken, diced (Meijer Rotisserie Chicken)
1 (48 oz.) Jar Randall Great Northern Beans (drain excess liquid)
2 Cups Medium or Hot Salsa
1 Tbls. Meijer ground cumin
1 1/2 – 2 Cups Kraft 2% Milk Shredded Colby-Monterey Jack Cheese
Directions:
Heat a medium to large size stock pot over medium heat and add beans, salsa, and cumin and bring to a gentle boil. Stir in chicken and heat through. Add cheese to melt. Serve with Meijer brand tortilla chips to scoop chili.

Pumpkin Dip
Serves 10
Ingredients:
1 (8 oz.) pkg. Meijer light cream cheese, softened
1 cup canned pumpkin
3/4 cup Meijer light brown sugar
1 tbsp. Pure maple syrup
3/4 tsp. McCormick ground cinnamon
Directions:
1. In a large bowl and using an electric hand-mixer, beat together cream cheese, pumpkin and brown sugar at medium speed. Add maple syrup and cinnamon; beat until smooth. Cover and chill 30 minutes.
2. Serve with apple slices (NuVal score 96). Note: Dip apple slices in pineapple juice to prevent browning.

Carrot Fingers and Ranch Dressing
Serves: 6 to 8

Ingredients
• 1 bag peeled baby carrots
• 1 cup sliced almonds
• Meijer light cream cheese
• Bottled light ranch dressing

Directions
Place a bit of cream cheese on the end of a baby carrot and place an almond slice face down on top. The almond should look like a fingernail on the carrot "finger". Repeat until all carrots are finished. Pour dressing in a bowl and stand a few carrot fingers upright in the bowl. Place the bowl on a platter and lay the remaining carrot fingers around the bowl.

Graveyard Cups
Serves 8
Ingredients
2 Cups Chocolate pudding (prepared)
18 to 24 Chocolate Stuffed Oreo cookies, crush to coarse crumbs
8 Gummy Worms
8 Graham Cracker Squares (separated into 1/4 sheet rectangles)
Writing Icing (such as Betty Crocker® Easy Writer Decorating Pens)

Directions:
Add approximately 1 Tbsp. crushed cookies crumbs to each of 8 dessert cups. Top with a gummy worm and then add 1/2 cup pudding. Top each cup with remaining crushed cookie crumbs. Use writing icing to decorate graham crackers to resemble headstones (R.I.P), and place each graham-headstone into dessert cups. Serve.
