Baked Apples with Granola

Express Chicken Noodle Soup
Serves: 4
Ingredients:
4 Cups Swanson reduced sodium Chicken broth
1/8 tsp. Meijer ground black pepper
1 medium carrot, sliced (about 1/2 cup)
1 stalk celery, sliced (about 1/2 cup) (NOTE: 1 Cup frozen vegetables can be substituted for carrots and celery)
2 skinless, boneless chicken breast halves (about 1/2 pound), cut into 1-inch pieces (or 1 large can Swanson diced chicken)
1/2 cup uncooked whole wheat egg noodles
Directions:
Heat the broth, black pepper, carrot, celery and chicken in a 2-quart saucepan over medium-high heat to a boil. Stir in the noodles. Reduce the heat to medium. Cook for 10 minutes or until the chicken is cooked through and the noodles are tender.

Pinwheel Mini Sandwiches
Ingredients
3 (10 inch) Flour Tortillas
3 Tbls reduced-fat mayonnaise
1 Tbls Meijer yellow mustard
6 Kraft 2% Milk American Singles
1 16oz. Package sliced lunch meat (ham and turkey blend)
3 Large lettuce leaves
Directions:
Spread tortillas with mayonnaise and mustard; top with cheese single, meat and lettuce. Roll up tightly; cut each roll into 8 slices. Serve.
Baked Apples with Granola
Serves: 4, Time: 25 Minutes
Ingredients:
2 – 3 large crisp apples (such as gala, piñata, braeburn, Fuji)
2 Tbls. Raisins or dried cherries
2 Tbls. Meijer packed brown sugar
1 Tbls. plus 1 tsp. margarine or healthy butter blend, softened
4 crunchy granola bars, crushed (or 1/2 cup low fat granola cereal)
Vanilla yogurt
Directions:
Cut apples in half lengthwise. Using spoon, remove and discard cores, making at least a 1-inch indentation in each apple half. In microwavable pie plate, arrange apple halves, cut sides up. Fill each apple half evenly with raisins (or dried cherries) and brown sugar; dot with butter. Cover with microwavable plastic wrap, folding back one edge 1/4 inch to vent steam. Microwave on High 5 to 6 minutes or until apples are tender. Top each with apple half with crumbled granola and a dollop of vanilla yogurt.
