afternoon winds which allow the vineyards to produce intense, dark and luscious fruit. The 350-acre Paso Creek vineyard produces particularly small berries which make for very concentrated wine. Blackberries, black cherries and cassis dominate this wine, but 15 months of aging in both French and American oak barrels give it a cedary, leathery finish that balances with the fruit perfectly. Blue cheese has a rugged nature of its own. Powerful and salty, blue cheese needs to be paired with a wine that has ripe fruit concentration and enough attitude to stand up for itself.
