Fruited Wheat Bran Muffins
Servings: 12
Ingredients
1 1/4 cups Meijer all-purpose flour
1 1/2 tsp baking powder
2 tsp Meijer cinnamon
1/4 tsp baking soda
1/4 tsp nutmeg
1/8 tsp salt
1 1/2 cups Kellogg's® All-Bran® Complete® Wheat Flakes cereal (crushed to 3/4 cup)
3/4 cup Meijer unsweetened applesauce
1/3 cup Meijer fat-free milk
1/4 cup refrigerated egg substitute*
1/2 cup firmly packed brown sugar
2 tablespoons Meijer vegetable oil
1/2 cup dried mixed fruit bits or chopped walnuts
Directions
1. In medium bowl stir together flour, baking powder, cinnamon, baking soda, nutmeg and salt. Set aside.
2. In large bowl combine KELLOGG'S ALL-BRAN COMPLETE WHEAT FLAKES cereal, applesauce, milk and egg substitute. Let stand about 2 minutes or until cereal softens. Add brown sugar and oil. Beat well. Add flour mixture, stirring until just combined. Fold in fruit bits. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray or lined with foil bake cups.
3. Bake at 375°F about 17 minutes or until toothpick inserted near center comes out clean. Cool in muffin pan for 5 minutes. Remove from pan. Serve warm or cool.
*Note: if desired, substitute 1 slightly beaten egg or 2 slightly beaten egg whites for the egg substitute

Whole Wheat Banana-Nut Pancakes
Delicious pancakes, featuring whole wheat flour, Kellogg's® All-Bran® Original cereal, mashed banana and pecans, make great fare for breakfast or casual suppers.
Servings: 10
1 cup whole wheat flour
1/2 cup Kellogg's® All-Bran® Original cereal
2 tablespoons brown sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 egg, slightly beaten
1 1/4 cups milk
1 medium banana, mashed (1/3 cup)
1/3 cup chopped pecans
- or -
1/3 cup chopped walnuts
Maple syrup
Banana slices (optional)
Chopped pecans (optional)
Directions
1. In large bowl combine flour, KELLOGG’S ALL-BRAN Original cereal, brown sugar, soda, cinnamon, salt and nutmeg.
2. In medium bowl stir together egg, milk and banana. Add to flour mixture, mixing until just combined. Stir in 1/3 cup pecans.
3. For each pancake, on hot, lightly greased griddle or large skillet pour about 1/4 cup batter. Cook over medium heat about 2 minutes on each side or until golden brown, turning when pancakes have bubbly surfaces and edges are slightly dry.
4. Serve with syrup, banana slices (if desired) and pecans (if desired)

Veggie Breakfast Patty
Servings: 1
Non-stick cooking spray
1 ounce dried onion
8 ounce egg substitute
1 Morningstar Farms® Garden Veggie Patties® Veggie Burgers
Salt and pepper to taste
1/4 cup grated Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees.
Heat cooking spray in a small skillet.
Pour 1/2 of egg substitute contents into skillet.
Add veggie burger.
Add remainder off egg substitute and dried onion.
Season with salt and pepper.
Heat in oven for 5 minutes.
Add cheese and remove from oven when cheese melts.

English Muffin Burgers
Total Time: 10 minutes
Servings: 2
2 Whole grain English muffins
2 Morningstar Farms® Grillers® Original
2 Lowfat Cheddar cheese slices
2 pieces of lettuce for topping
2 tomato slices
Toast English muffins.
While English muffins are toasting, cook veggie burgers according to instructions on package.
Once burgers are cooked, place each burger on bottom of toasted English muffin.
Top each burger with a slice of cheese, piece of lettuce, a slice of tomato and English muffin top.
