Tuscan Glazed Chicken
1/3 cup Hellmann's® Mayonnaise Dressing with Extra Virgin Olive Oil
3 T. finely chopped roasted red peppers
1 t. Meijer garlic powder
1/2 t. dried Italian seasoning
1 t. balsamic vinegar
6 boneless, skinless chicken breast halves (about 2 lbs.)
Preheat oven to 425°. Combine all ingredients except chicken in medium bowl. Arrange chicken on baking sheet, then evenly top with mayonnaise mixture. Bake 20 minutes or until chicken is thoroughly cooked. Slow Cooker Stuffed Peppers
3 large red bell peppers
1 jar (1 lb. 10 oz.) Ragu® Old World Style® Pasta Sauce
2 cups Meijer shredded low-fat cheddar cheese (about 8 oz.)
1 lb. ground turkey or ground beef
1 cup Meijer frozen green peas
1/2 cup regular or converted rice (try brown rice)
1 large egg, slightly beaten
1/2 t. Meijer salt
With knife, slice 1/2-inch off top of red peppers. Remove seeds and ribs. Coarsely chop tops and set aside. In medium bowl, combine 2 cups Pasta Sauce, 1 cup cheese, chopped red peppers and remaining ingredients. Evenly stuff peppers. In 4-1/2-quart slow cooker sprayed with nonstick cooking spray, arrange peppers. Top with remaining Pasta Sauce. Cook covered on LOW 8 to 10 hours or HIGH 4 to 6 hours. Sprinkle with remaining 1 cup cheese and cook covered an additional 10 minutes or until cheese is melted. To serve, slice peppers in half. Green Tea Asian Stir Fry
1/2 cup brewed Lipton Green Tea Bags, any variety
2 T. Meijer reduced sodium soy sauce
2 T. Meijer honey
2 T. Meijer olive oil
1 lb. boneless, skinless chicken breasts, thinly sliced or 1 lb. pork tenderloin, thinly sliced
1 bag (16 oz.) frozen Oriental or stir-fry vegetables
Combine tea, soy sauce and honey in small bowl; set aside. Heat olive oil in 12-inch skillet over medium-high heat and cook chicken, stirring frequently, 5 minutes or until chicken is thoroughly cooked. Remove chicken and set aside. Add vegetables and tea mixture to same skillet. Bring to a boil over high heat. Reduce heat and simmer 3 minutes or until vegetables are almost tender. Return chicken to skillet; cook 1 minute or until heated through.
*Brew 2 Lipton® Green Tea Bags in 1/2 cup boiling water for 1-1/2 minutes.
